Jamming in winter

I made the most important discovery ever. You can make jam with frozen strawberries. Do you realize how life changing  this is?? No more firing up the stove in the heat of summer to preserve the 28lbs of strawberries you picked or for that matter the peaches and the apricots. Just prep and freeze. And then when it is cold in winter and actually a pleasure to stand over a hot stove, you take out your stash and start jamming.
I hunted high and low for jam recipes that were easy for a beginner and had a high ratio of fruit to sugar and found this.



I have used this recipe very successfully. Simple ingredients: Fruit, sugar and lemon juice make a jam bursting with  flavor and far less sugar than most commercially available jams.

To use frozen strawberries, simply measure out 4 cups of whole frozen strawberries and proceed as usual. The cooking time is a little more (15 minutes) but there is really no difference in flavor.
I have never canned the jam. I usually cool it and store it in freezer jam jars in the freezer.

Some ideas for add- ins and variations
  •  2 tbsps of red chilli flakes 
  • Roughly cracked pepper (about 12 pepper corns)
  • Fresh ginger
  • Sliced serranos ( 3 tbsps)
  • Cardamom ( add about 3 pods)
